Light & Fit

I like yogurt but was getting very tried of it until...... Light & Fit pineapple coconut!!! I was told it was good but this was so refreshing. It also has pieces of pineapple which I love!! Locally I can only find it a Wegmans. I also heard they have another great new flavor of coconut vanilla. That's will be my next flavor to try. So if you are in a yogurt rut try the new flavors of light & fit!

Buffalo Wontons


Ingredients:
1/2 cup melted butter
1/2 hot pepper sauce
2 tsp distilled white vinegar
2 cups shredded cooked chicken
1 (8oz) package cream cheese, softened
1 (12 oz) package of wonton wrappers
1 egg white
2 cups frying oil

1. Whisk the butter, hot pepper sauce, and vinegar together in a bowl until smooth. Stir in the shredded chicken, and let stand for 15 minutes.

2. Lay out several wonton wrappers, place 1/2 tsp chicken in the center of each wrapper and top with 1/2 tsp cream cheese. Brush edges of the wonton with egg white, fold them over in a triangle shape and press edges together to seal. Continue until all wontons are filled.
3. Heat oil in a saucepan over medium-high heat to 375.
4. Cook the wontons, carefully placing the wontons 4-5 at a time into the hot oil and deep fry until golden brown, flipping as necessary for even browning, about 2 minutes. Remove wonton from the oil and drain on paper towel.

Prep time 20 minutes
Cook time 15 minutes
Serves 16
5 kitchen spoons!!!!! this has been the best recipe yet. It will be a highly requested item. They are so good!!!!
My recommendation is to get a Fry Daddy. I have an electric stove and it was hard to control the oil temperature.

HG- Chips don't lie danish

Ingredients:

For Icing
1 1/2 tsp. Splenda No Calorie sweetener (granulated)
1 tsp powdered sugar
1 tsp. cornstarch
1 drop vanilla extract
1 tbsp. Jet-Puffed marshmallow creme
1 tbsp. Cool Whip Free, thawed

For Danish
half 8 oz. tub fat-free cream cheese, room temperature
2 tbsp. Splenda
1 tbsp light vanilla soy milk
1/2 tsp vanilla extract
1/4 tsp. cinnamon
1/4 cup old fashion oats
2 tbsp. mini semi-sweet chocolate chips
1 package Pillsbury Crescent Recipe Creations Seamless Dough Sheet

Directions:

Preheat oven to 350.

Spray large baking sheet with nonstick spray. Lay out your dough one the sheet and use a rolling pin lightly roll it out into a long rectangle of even thickness. Arrange baking sheet so that the short sides are on the right and left and the long sides are on the dough, leaving 1 inch borders on the left and right and the long side are on the top and bottom.

In a medium bowl, combine cream cheese, splenda, soy milk, vanilla extract, and cinnamon, and stir until thoroughly mixed. Fold in oats and chocolate chips.

Spoon filling lengthwise across the middle third of the dough, leaving 1-inch borders on the left and right of filling.

Starting from the top, make vertical cuts- about 1 inch apart-- along the top section of the dough, stopping about 1/2 inch above the filling. Repeat with the bottom section of the dough, cutting upward towards the filling. This will create 1 inch wide strips of dough on both and the bottom of the filling.

Alternate folding the 1-inch strips from the top and the bottom sections over the filling, covering it completely and creating a criss-crossed or "braided" appearance. After all the strips have been folded, fold the left and right sides of the dough in toward the filling, so the filling cannot escape, and press firmly to seal.

Bake in the oven for 15-20 minutes, until pastry is crispy and light golden brown. Allow to cool completely.

To make the icing, combine Splenda, powdered sugar and cornstarch in a small microwave safe bowl. Add vanilla extract and 1 1/2 tsp cold water, and mix until dissolved. Add Marshmallow creme and microwave for 5 seconds, or until creme is soft enough to combine with mixture. Stir until smooth. Add Cool Whip and stir again, until evenly combined. Refrigerate until you are ready to ice the Danish.




This the way the dough should be placed on the cookie sheet.

Remember to wait until Danish is completely cooled.




Here is one serving of the danish. It's is a nice gooey inside. Makes 8 serving.


If you count WW Points 3 pts per serving. My review is 5 kitchen spoons! It taste great, reminded me of a cinnamon roll soft inside. I know it says only 2 tbsp of chocolate chips but it enough.

Refrigerate leftovers.

This weeks recipes

Update: I didn't forget the cherry bread post. I will put it up tomorrow!
This week I am planning on 2 recipes: 1. Easy Slow Cooker French Dip (allrecipes.com) 2. Chocolate chip danish (hungry girl). Both recipes look very easy.I will post the recipe once I complete and post my review.
I was walking in Lowe's the other day and stopped a cookbook!! I love cookbooks I could read them all day. I thought I cookbook at Lowe's so I picked it up and it happened to be a twist on food to make them taste good but without all the bad stuff (calories & fat). I found myself very interested and flipping through finding several recipes I would like to try. I bought it this is unusual for me I don't usually impulse buy but I thought I would enjoy it. All the way home a flip the pages think wow this looks easy and they are small serving. Now I will have to venture out and try some new things that I am not used to but here's to a New Year!! I later looked for the book on eBay and discovered she has 2 books. I returned the book back to Lowe's (thanks Lowe's) and purchased the 2 books for less then the 1 (thanks eBay). I just got the book in the mail and I am ready to start my reviews on the HG CB! Remember this is out of my safe area for me. I will be trying soy milk, dry creamer, splenda and other things that I am not used to but that is what this adventure is all about.
I am excited to try the HG recipe I have look in her cookbooks and a bunch of recipes jump out but I thought this is a nice start for my weekly adventure. I would like to make at least one recipe from HG a week until I get through the two books I purchased (eBay).

Cherry Bread

Cherry Nut Bread* 1 cup of sugar, 1 1/2 cups four, 1 1/2 teaspoons baking powder, 2 eggs(beaten), 1-8 oz jar maraschino cherries(chopped) with juice, 1 cup nuts

Preheat oven to 350. Combine sugar, flour, baking powder in bowl. Add eggs, cherries with syrup and walnuts. Mix well; spread batter in greased loaf pan. Bake for 50-60 minutes. *this bread freezes well*




Cherry bread, my grandma made this bread at Christmas this year and it was great! I have never had it and I am so glad she brought it out for Carl and I to try. I have been waiting since Christmas to make this. I made sometime Friday afternoon and it was so easy! Now the recipe doesn't call for chopping the cherries but on a recommendation from grandma I chopped them!








I think this would be a great valentines day bread. It is nice and pink!


















Bake it for 40-50 minutes until golden brown.




Slice and enjoy. Look at all the CHERRIES!!

Buffalo Chicken Soup

I found this recipe on another cooking Blog and thought it looked good. I love chicken wings and was hoping this turns out good.


















6 cups milk
3 cans on condensed soup (10.5 oz) (I use 2 cream of chicken and 1 cream of celery
1 cup of light sour cream
1/2 cup blue cheese dressing
1/2 cup Franks hot sauce
3 cups of cooked chicken ( I par boiled the chicken, 2 large breast)


Combine all ingredients in pot and let cook for 30 minutes. I kept it on med-high until boil then turned down to low. Stirring to avoid burning the bottom. You could also put all ingredients in a crock pot on low for 4 hours.



Here is the finished product. I added a spoon of blue cheese dressing and sprinkled so more hot sauce on the top.


My final review is 5 kitchen spoons! This was SO easy! It also tasted great. My suggestions would be to serve in bread bowl or over rice. Also serving with fresh celery. I will make this recipe again.

Fiber One- Review

First things first.....Like my new stove! You can see I took the picture before I removed the instructions from the oven door. I couldn't wait any longer. Carl had just finished making the final adjustments to make it fit perfectly.

Today will be my first review of a product. I made Fiber One Banana muffins. I have been a fan of Fiber One products for a while. I have tried pancake mix, Cinnamon pop tart and some of the fiber bars. I have liked all the products so far. I saw this mix in Target the other day and thought why not....

I simply followed the directions on the back of the box. I did notice one thing right off the bat. You can see the nuts in the batter!!!! In most box products if it states it has nuts they chop them so fine you can't see them. I wouldn't say it was nut heaven but noticeable.


I evenly scooped (I use a large cookie scoop) the batter into a 12 cup muffin tin. I didn't have muffin papers so I just sprayed the pan with PAM. In the oven for 15 minutes.


They look good. Nice and golden.


DONE!! Did I mention my new stove works great! They are golden and sprung back when I touched the tops.




Once they cooled for 5 minutes I removed from the pan to let them cool more. They smelled so good. I cut one opened and placed some banana on the plate. Yummy, Yummy!


My final recommendation........5 kitchen spoons! I would make these again. The flavor was good I could taste and see the nuts and it was easy. But most of all it was easy. I made them before I came to work. What a great way to start off the day.

New Adventure

I am starting this new adventure to share my joy of cooking. I cook a lot but I wanted to bring the fun and excitement of cooking to more then just me. I love flipping through cookbooks, magazine and articles searching new ideas.

I wanted to share how my love of the kitchen started. My dad made cooking a huge part of my life. He had my sister and I plan a big Sunday meal from appetizers to desert. My sister and I would rotated Sunday's. On the Sunday's we didn't cook we planned and searched in cookbooks (I could read a cookbook all day everyday) made a menu then reviewed it with dad. He always made sure we had everything we need. We would then all sit down for the meal and review it. To see if anything need to be adjusted. If he liked it he would say "I think you need to try this again" still to this day I know when he says that it means he likes it. I am very grateful he gave me the experience of cooking. It always gives me pleasure when I cook. I enjoy analyzing my food thinking what would make this better, what can I do to enhance it or this was the way it should be.

I have an average size kitchen. It works for me don't get me wrong if a state of the art kitchen was offered I would take it. My one wish/goal is to have my kitchen more opened. I would love to be able to entertain in my kitchen. When we have people over I would like to be able to gather around my stove while I cook so I can be involved. We did add a table in the kitchen so people can sit and talk while we cook. Here are some pictures of my kitchen. These were taken right after we painted and put the new floor down. The new floor makes the kitchen brighter.



This is my work area. I do like the way my kitchen is set up. Everything in reach.

I also got a new oven for Christmas!!! Yippee!! My old oven had a date of 1981! It did it's job. I have an electric stove which has taken some getting used it. I grew up on a gas stove. Electric is a totally different ball park. I have adjusted after 8+ years. Now I have to adjust to the new stove. It cooks SO much faster. I also got the flat top it is easy to clean and I haven't had any issue with it. (I will post pictures later)

My goal is to post one recipe a week with pictures. Leave comments and ideas!


This weekend I am planning to make cherry bread (thanks grandma) and a new recipe will be Buffalo Chicken soup!! I saw this recipe and thought it would be great for the cold streak we are going through in NY!!!
