2011 is right around the corner.....

2011
every year I make a list of 20-30 things that I want to accomplish through out the year
not
resolutions
but
goals
2010 I had 30 (I turned 30 so I thought how fun)
I complete ALL but 8
the 8 that I didn't complete are on the way to be done.
I will add them to my list this year.
I don't set time limits on my list except to be done by the end of the year. I think this helps me so I don't feel it's a chore but things I want to do.
I have started my list for 2011
I will post it once I am done.
Do you make goals for the year???

Cookie exchange Day 7- Minty Cream Wafers

All time favorite cookie!!! This recipe makes so many!!
1 cup butter, beaten med high for 30 seconds, beat in 2 cups flour, 1.3 cup evaporated milk. form into a ball, cover chill about 2 hours.
Preheat oven to 375. on a lightly floured surface roll dough to 1/8" thickness. cut with 1 1/2" round cutter. place on ungreased cookie sheet and sprinkle with sugar. prick each round 3 times with a fork. bake for 7-9 minutes (lightly browned). remove and cool on a wore rack.
**cookies will shrink while baking***
1/2 cup butter, beaten on med high for 30 seconds. Add 1 tsp. vanilla, 2 1/3 cup powered sugar gradually, beating until smooth and creamy. 1/4 tsp peppermint extract, red or green food coloring
generously spread the bottoms of half the wafer with frosting, and top with remaining wafers. makes about 70!!!

Cookie exchange - delayed

I will finish my last day of my cookie exchange this week. I was hit with the worst stomach bug I have ever had!!! I was in bed for two day straight and I am still recovering. My goal is to be 100% by Thursday so i can enjoy my work holiday party and we had to reschedule my baking day with my dad until Sunday.

Cookie exchange day 6- Whole Wheat Ginger Snaps

Spicy and chewy Ginger Snaps made with all whole wheat flour. I love ginger snap and this is a nice recipe using whole wheat flour!!
Original Recipe Yield 5 dozen

Ingredients
1 cup butter or margarine
1 1/2 cups white sugar
2 eggs, beaten
1 cup molasses
4 cups whole wheat flour
1 tablespoon baking soda
2 teaspoons baking powder
1 tablespoon ground ginger
1 1/2 teaspoons ground nutmeg
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground cloves
1 1/2 teaspoons ground allspice
1 cup white sugar for decoration

Directions
Preheat the oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter and 1 1/2 cups of sugar until smooth. Mix in the eggs, and then the molasses. Combine the whole wheat flour, baking soda, baking powder, ginger, nutmeg, cinnamon, cloves, and allspice, heaping the measures if you like a lot of spice. Stir the dry ingredients into the molasses mixture just until blended.
Roll the dough into small balls, and dip the top of each ball into the remaining white sugar. Place the cookies about 2 inches apart on the cookie sheets.
Bake for 10 to 15 minutes in the preheated oven, until the tops are cracked. Bake longer for crispy cookies, less time for chewy cookies. Cool on wire racks.

Cookie exchange day 5-peanut brittle

My grandma's favorite holiday treat! Every year she looks forward to my home made peanut brittle. She starts talking about it in late September.

Original Recipe Yield 1 pound

Ingredients
1 cup white sugar
1/2 cup light corn syrup
1/4 teaspoon salt
1/4 cup water
1 cup peanuts
2 tablespoons butter, softened
1 teaspoon baking soda

Directions
Grease a large cookie sheet. Set aside.
In a heavy 2 quart saucepan, over medium heat, bring to a boil sugar, corn syrup, salt, and water. Stir until sugar is dissolved. Stir in peanuts. Set candy thermometer in place, and continue cooking. Stir frequently until temperature reaches 300 degrees F (150 degrees C), or until a small amount of mixture dropped into very cold water separates into hard and brittle threads.
Remove from heat; immediately stir in butter or margarine and baking soda; pour at once onto cookie sheet. With 2 forks, lift and pull peanut mixture into rectangle about 14x12 inches; cool. Snap candy into pieces.

Cookie exchange day 4- cookies in a jar (great gift idea)


Great gifts. Share your love of baking with others. I love this idea. Make a basket (for the basket use an air tight container so they can store the cookies after they bake) with the cookie in a jar, wooden spoon, cookie sheet and recipe card!

Original Recipe Yield 3 dozen cookies

Ingredients
1 1/3 cups rolled oats
1/2 cup packed brown sugar
1/2 cup white sugar
1/2 cup chopped pecans
1 cup semisweet chocolate chips
1 1/3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt

Directions
Layer the ingredients in a 1 quart jar in the order given. Press each layer firmly in place before adding the next layer.
Include a card with the following instructions: Cowboy Cookie Mix in a Jar 1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. 2. In a medium bowl, mix together 1/2 cup melted butter or margarine, 1 egg, and 1 teaspoon of vanilla. Stir in the entire contents of the jar. You may need to use your hands to finish mixing. Shape into walnut sized balls. Place 2 inches apart on prepared cookie sheets. 3. Bake for 11 to 13 minutes in the preheated oven. Transfer from cookie sheets to cool on wire racks.

Cookie exchange Day 3- sugar cookie

I LOVE sugar cookies!! You can do so much with them. Shapes, use as a base for fillings, decorate whatever your heart desires!!

Recipe Yield 4 dozen

Ingredients
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup butter, softened
1 1/2 cups white sugar
1 egg
1 teaspoon vanilla extract

Directions
Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.
Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.

Cookie exchange day 2- PB cups


Another bit size cookie that I love. peanut butter and chocolate are made for each other!!

Recipe Yield 40 cookies

Ingredients
1 3/4 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 cup butter, softened
1/2 cup white sugar
1/2 cup peanut butter
1/2 cup packed brown sugar
1 egg, beaten
1 teaspoon vanilla extract
2 tablespoons milk
40 miniature chocolate covered peanut butter cups, unwrapped

Directions
Preheat oven to 375 degrees F (190 degrees C).
Sift together the flour, salt and baking soda; set aside.
Cream together the butter, sugar, peanut butter and brown sugar until fluffy. Beat in the egg, vanilla and milk. Add the flour mixture; mix well.
Shape into 40 balls and place each into an ungreased mini muffin pan.
Bake at 375 degrees for about 8 minutes. Remove from oven and immediately press a mini peanut butter cup into each ball. Cool and carefully remove from pan.

Cookie exchange day 1- pecan tassie

Pecan tassies are my favorite bite size cookie. It's a mini pecan pie that you can pop in your mouth.

PECAN TASSIES

Pastry:
3 oz. cream cheese1/4 c. butter1 c. sifted flour
Soften cheese and butter. Add flour. Mixture will be very stiff. Form into ball and store covered in refrigerator for 1 hour. Shape into 24 one-inch (walnut size) balls. Place in tiny ungreased muffin tins. Press against bottom and sides of cup to form small pastry cups.
Filling:
3/4 c. brown sugar1 egg, beaten1 tbsp. butter1 tsp. vanilla3/4 c. pecans, broken updash salt
Beat together egg, sugar, butter, vanilla and salt until smooth. Add pecans. Fill pastries.
Bake at 325°F for 25 minutes. Cool on wire rack.
Remove from pan by inverting on rack and thumping on bottom of pan. These freeze well.

Cookie Exchange- Blog style

It's almost December and that means a whole lot of baking for my family
I thought it would be fun to do a blog cookie exchange.
with most cookie exchange you bring "x" amount of cookies and you trade with the others to get a bunch of different kinds so you don't have to bake as much & you get a variety and most importantly you may get a flavor you have never had (good time to try things you may not get to).
Idea:
post a recipe everyday for a week
I will start 12/6
my big baking day is 12/13 with my dad and I will share everything we did on the 14th

Thankful

I am Thankful for so many things"
my family and how we all support each other
my husband
my health
my friends
that I am able to provide for my family
that I love with all my heart
that I have made huge changes over this last year
that I am learning to let go
this is only the short list
I hope that everyone has a great Thanksgiving and enjoys the company that they have.

Time line- Turkey day

This will all depend on when you have dinner. We don't eat until 6 pm so I have all day. To tell you the truth sometimes I feel as if I am way behind. I don't put my turkey in until 2 pm!!

Day before- I bake, bake and bake! I get all my pies, breads and home made cranberry sauce done.

Big day-

9-10- Macy's Thanksgiving parade!!
10- baked another loaf a bread
10:30- baked squash
11- started my stuffing put in oven @12, remove squash removed from skin put in bowl added butter, brown sugar let sit
11- cutting my celery, onion that I would need for the day
12- put stuffing in oven for 45 minutes
12- peeled sweet potatoes put in oven 12:30
12:30- dishes and cleaned kitchen
12:45-1 break time- Blog
1:15- start getting my turkey ready- for the first time ever I have decided to use a turkey bag. Several people have recommended it and it cuts down on cooking time
1:30 out turkey in oven (3 1/2-4 hours) 5:30 done time
1:30- peel potatoes I am also using a different recipe than I post. It was giving to me last minute and you use your crock pot and chicken broth. takes 4 hours, make ice cubes
2- clean up kitchen. empty dish washer for after dinner dishes.
2:30 shower, get cleaned up
3:30- set table, make lemonade, ice tea, cut cheese foe pies, organize refrigerator
4- mom should be arriving, visit relax
4:30- everyone else should arrive
4:45-5 check turkey, pull turkey out, remove pan drippings, let turkey sit for 15-20 minutes
5:15- make gravy, put stuffing, sweet potatoes, squash back in oven to warm up, put mashed potatoes in serving bowl
5:30 carve turkey and sit down and enjoy my family and friends

WHY????

I am so puzzled by the world today.
I had a rough weekend emotionally but regrouping and back at work on Monday
I noticed someone came in to the office and I got up to greet and saw this customer that is a pain in the a$$. He always ask to see me which is fine I know that he is a pain.
W: hello, can I help you? (I think to myself push those thoughts of him being a pain and be positive)
C: Yes, is Wendy here today?
W: it's me Wendy ( I am far away so I can understand)
C: Why I did think it was you. You look so young
W: THANKS
C: well it could be because I'm getting older
W: What can I do for you (giggling because I know that is his humor)
I take care of his transaction and we get into a discussion of his family and how they are going through a tough time. I console him and tell him that I hope it works out the way it is supposed to be. I also tell him that I will think of his family ans pray for them (I never say things like that to customers because I don't share any type of religious or political views). As I stand up and tell him Happy Thanksgiving and re assure him that things will work out.
he states:
C: Don't eat too much you can't afford to put anymore weight on.
W: wow, OK, have a nice day
I was in total shock.
WHY would anyone say that.
I don't need to worry about what I eat on Thanksgiving I am not obese. Even if I was WHY does he feel he has the right to say something.
WHY do people feel they have a right to say something.
I didn't say have a better attitude don't be so negative and think that everyone is out to get you.
I came a way from this with angry but I have turned it into sympathy.
This person feels bad about his life and I would say does everyday. I have know him for several years and he always has the angry face on.
I can only say that I am not an angry person that I am a happy person and I feel bad for him.
I love myself and yes it did hurt when he told me that basically I am fat I know that I am not and I love me.

Day 7- Caramel=pecan Cheesecake pie

In fall or any time of year, nutty, rich and delicious pie is one I am proud to serve. While it seems very special its a snap to make.

Ingredients:

1 sheet refrigerated pie pastry
1 package (8 oz) cream cheese, softened
1/2 cup sugar
4 eggs
1 teaspoon vanilla extract
1 1/4 cup chopped pecans
1 jar (12 1/4 oz) fat free caramel ice cream topping

Directions:

1. line a 9-in. pie plate with pastry. trim and flute edges. in a small bowl, beat the cream cheese, sugar, 1 egg and vanilla until smooth. spread into pastry shell; sprinkle with pecans.
2. In a small bowl, whisk remaining eggs; gradually whisk in caramel topping until blended. pour slowly over pecans.
3. Bake at 375 for 35-40 minutes or until lightly browned (loosely cover edges with foil after 20 minutes if pie browns to quickly). Cool on a wire rack for 1 hour. refrigerate for 4 hours or overnight before slicing. Yields 6-8 servings.

Prep: 15 minutes
Bake 35 mins + chilling

**when you bake this pie the caramel will sink to the bottom and the pecans will rise to the top**

Day 6- Cherry Bread


Cherry Bread- Grandma's recipe
Cherry Nut Bread* 1 cup of sugar, 1 1/2 cups four, 1 1/2 teaspoons baking powder, 2 eggs(beaten), 1-8 oz jar maraschino cherries(chopped) with juice, 1 cup nuts

Preheat oven to 350. Combine sugar, flour, baking powder in bowl. Add eggs, cherries with syrup and walnuts. Mix well; spread batter in greased loaf pan. Bake for 50-60 minutes. *this bread freezes well*

Day 5 Cranberry Sauce

Cranberry Sauce

Ingredients:
12 oz of fresh or frozen cranberries
6 oz unsweetened apple juice concentrate

Directions:
In a sauce pan, combine the cranberries and apple juice. Cook over medium-low heat until berries burst. Additional sugar may be added if desired. Mix well, chill and serve.

*you can use orange juice as well*
I don't usually make cranberry sauce. not many in my family like it so I have tons leftover. I plan on making it the day before and whatever I have left freezing it.

Day 4 - Stuffing- Dressing

Easy Sausage Stuffing

Ingredients:
1 pound Bob Even Savory Sage or Original Recipe Sausage roll
1 large onion, diced
3 stalks celery, diced
1 (14 oz) package cubed stuffing
1 teaspoon poultry seasoning
2 1/2 cups chicken broth
1/2 cup melted butter

Directions:
1. In a large skillet over medium heat, crumble sausage. Add onion and celery and cook, stirring occasionally until sausage is brown. In a large bowl, place cubed stuffing. Add sausage mixture. Sprinkle with poultry seasoning. Pour broth and butter over the top toss and combine. Spoon mixture into a 9x13 inch baking dish; cover.
bake at 250 for 45 minutes

Prep time: 15 minutes
Cook time: 45 minutes
Ready in 1 hour
serves: 8

Day 3- Sweet Potatoe

Sweet Potatoes
I love them. I like them as fries, baked and mashed but for Thanksgiving I make a casserole.
Ingredients:
3/4 large sweet potatoes
3-4 tablespoons butter
3-4 tablespoons brown sugar
sprinkle of cinnamon
handful of Cranraisins
**for this recipes like many of mine I don't have a written follow to the tea recipe.**
Directions:
Peel and slice s. potatoes (the thinner you slice them the faster they will cook, slice all the same so they all are done at the same time)
put in a 9x13 casserole dish
sprinkle brown sugar, cinnamon and cranraisins on top
cover with foil and bake at 350 for 30-45 minutes until potatoes are soft
This is my favorite dish of Thanksgiving!!!

Day 2- mashed potatoes

Day 2- mashed potatoes

I love this recipe for many reasons. One being I can make them ahead and have them turn out as if I just made them.


Ingredients:

5 pounds potatoes, peeled & cubed

1 cup sour cream

2 (3oz) packages cream cheese, softened

3 tablespoons butter, divided

1 teaspoon salt

1 teaspoon onion salt

1/4 teaspoon pepper


Directions:

1. Place potatoes in pot; cover with water. Cover and bring to a boil. Cook for 20-25 minutes or until very tender; drain well.

2. in a large mixing bowl, mash potatoes. Add sour cream, cream cheese, 2 tablespoons butter, salt, onion salt and pepper; beat until fluffy. Transfer to a greased 2-qt. baking dish. Dot with remaining butter. Bake, uncovered, at 350 degrees F for 20-25 minutes or until heat through.


Serves 8

Prep time 35 minutes

Cook time 20 minutes

Ready in 55 minutes

* I put them in when I take my turkey out. My turkey need to rest for 15-20 minutes.

* I boil and mash my potatoes the day before and have them ready to put in oven on T-day.


Thanksgiving 2010/ Day 1

I love Thanksgiving.
I thought I would share some of my favorite foods/recipes.
I will post everyday a new recipe that I use or have used for Thanksgiving.
Day 1- turkey

Day 9- What I am thankful for & pictures of my 2010 Thanksgiving
Day 1- TURKEY
the most important item of the day. I am lucky that we don't eat until 6 pm. No having to get up early and put the bird in!!! I have a basic recipe for turkey. I don't stuff my turkey I cook mine separate. My goal is to have a moist turkey with flavor (aren't we all).
22 lbs turkey
vegetable oil
salt & pepper
thaw turkey according to safety tips below (22lbs=4 days in refrigerator)

Preheat oven to 325 degrees. Remove turkey from bag. Drain juices and pat dry with clean paper towels.
Place turkey lifter across full length of flat rack in a shallow roasting pan, 2 to 2 1/2 inches deep.
Tuck wings back to hold the neck skin in place. Doing so will help stabilize the turkey in the pan and when carving. Place thawed or fresh turkey, breast up, on the turkey lifter. Raise one loop over wings and breast, and the other loop over drumsticks. Rest loops on turkey, not over edge of pan during roasting.
Brush skin lightly with vegetable oil or spray with cooking spray to prevent the skin from drying.
Sprinkle salt and pepper on turkey and in the cavity of the turkey
Insert oven-safe meat thermometer deep into the lower part of the thigh muscle but not touching the bone. When thigh is up to temperature and if turkey is stuffed, move thermometer to center of stuffing. Stuffing should be 165 degrees when done.
Place your turkey in the pre-heated oven at 325 degrees.
When the turkey is about 2/3 done, loosely cover the breast and top of drumsticks with a piece of lightweight foil to prevent overcooking.
Your turkey is done when the meat thermometer reaches the following temperatures:
180 degrees deep in the thigh. At this temperature juices should be clear, not reddish pink, when thigh muscle is pierced deeply.
165 degrees in the center of the stuffing, if turkey is stuffed.
Lift roasted turkey onto platter with turkey lifter and discard lifter.
Before removing stuffing and carving, let your turkey stand 15 minutes to allow juices to set.
I cover my turkey with tin foil and a kitchen towel to keep warm while resting.
22 lbs = 3 1/2 to 4 hours un-stuffed
4 1/2-5 hours stuffed

Turkey Safety Tips:
Thawed turkey may be kept in the refrigerator up to 4 days before cooking
.
Use paper towels, not cloth, to wipe off turkey and clean up juices.
Combine stuffing ingredients and stuff turkey just before roasting, not the night before.
Food Safety Tips:
Keep cold food below 40 degrees and hot food above 140 degrees.
Thaw your frozen meat on a tray in the refrigerator or in cold water with the breast side facing down. Once thawed, prevent uncooked juices from dripping onto other foods in the refrigerator by placing packaged meats on a separate tray or in a sealed dish.
Cook fresh meat as soon as possible, but no later than the Use-By date on the package. Fully cooking meat destroys bacteria that could cause food-borne illness.
Store raw meats away from the cooked meats, as well as away from fresh fruit and vegetables, to prevent cross contamination from occurring.
Store cooked meats in the refrigerator as soon as your meal is over. The maximum time limit for keeping cooked meat at room temperature is 2 hours.
When transporting cooked meat from your home to a party or another location, remember to keep it cold in a cooler or similar vehicle.
Experts recommend using two cutting boards, one strictly to cut raw meats and the other for vegetables and cooked foods. Cutting boards should be washed thoroughly in hot, soapy water after each use and allowed to air dry or be dried with clean paper towels.
Wash hands, work surfaces, and utensils touched by raw meat and its juices with hot, soapy water.
Use a meat thermometer to determine turkey’s doneness. If you don’t have a meat thermometer to measure the internal temperature of the stuffing in the turkey, the stuffing should be cooked separately.
Use cooking methods that allow the turkey to reach an internal temperature of 140 degrees in less than 4 hours and a final temperature of 180 degrees in the thigh. If stuffed, the stuffing should reach 165 degrees. Avoid using a low roasting temperature or partial cooking method.
Store turkey, stuffing, gravy, broth, and other leftover cooked foods in separate containers in the refrigerator within 2 hours of cooking. Remove turkey from bones before storing.

PB Snap Crackle 'n Pop brownies


Peanut Buttery Snap Crackle ‘n Pop Brownies

1 box brownie mix, prepared in a foil-lined baking dish
1 cup sugar1 cup light corn syrup
1 1/3 cups peanut butter
1 teaspoon vanilla
4 cups Rice Krispies
Prepare brownies in a foil-lined baking dish. Heat sugar and corn syrup in a heavy bottomed saucepan over high heat until mixture reaches a boil. Remove from heat. Stir in peanut butter and vanilla until smooth. Pour over rice krispies and stir to combine. Immediately press the peanut butter and rice krispies mixture over the brownies

NOvember

I can't believe that we are in the 2nd week on November!!!!!
November News:
  • i went monthly shopping last Friday with no success. I finished at Sam's club, went to Walmart and it hit me my famous dizzy spell. I had only gotten my H&B and started to look at humidifiers and BAM I couldn't see, I was hot, and needed to get out fast. I made the decision to check out.... I have no problem with people that are on a tight budget and I am sure it was due to my spell that I became so annoyed she questioned every price not to be budget wise but to complain!! Any woo, I checked out went outside in the fresh air and started to feel better. It did not last as long as most spells. I feel it was related to my allergies. This year in NY it will be 30 on day and 70 the other.So now I need to find some extra time to finish up
  • Bomb dropped that I may end up with 20+ people at Thanksgiving. I love Thanksgiving. It's a family tradition (my dad's family) to come to my house and I love it. I don't find making a big meal is a big deal. This year like ever year we invited my husbands parents (usually they are out of town) to come over. When we saw them 2 weeks a go they mentioned that my husbands sibling's may be in town=+10. I love all of them dearly. I love all my nieces and nephews (we love kids) but I don't know if I have room. It is still in limbo. I just want to know what's going on. I love my family and I can't wait to Thanksgiving!
  • 30 day challenge- not so good but not so bad. I work out 5 days a week. I mix it up so I don't get bored. I made a great chart on my calendar to let me see my accomplishments and I actually feel so much better and feel bad on my rest days. I know that my body needs my rest days and it works for my schedule. My rest days are Tuesdays and Saturday. I have lost about 3.5 pounds so far. I have been eating on track but I have cut portions and not eating snacks as much as I have been. Eating only when I am hungry. I am proud of the steps I am taking to gain control.
  • out of town- this weekend I am headed to visit my grandma. I am excited, nervous, happy, sad. November 13 will mark ONE year since my grandpa passed away. This has been the toughest year of my life but also the most rewarding year of my life. It sounds crazy but I have made huge changes in my life and I am proud that I took a step back and started to focus on more on me. I know that my grandpa would be so proud of me. I have stepped in to help my family mourn the loss of a great man. I have stepped out of my comfort zone and done things that I didn't think I would. I have my days but they are not about the selfish reason like they were when he first passed. I miss him and I know he is my guardian angel and he is watching over me.
  • Christmas shopping- hoping to take grandma to quilting store to shop for my mom's gifts then on the way home from my visit with grandma I will stop at the outlets. Last year i did 80% of my shopping at the outlets. Plan is to have 80% of my shopping done by 11/13! I don't have many to shop for my parents, grandma, husband, nephew and AP (she's almost done).
  • Christmas decorations- this year for the first time I am going to start decorating in November for Christmas. I want to have winter decorations up for Thanksgiving. We always travel for Christmas and we are they only ones besides my dad that gets to see my Christmas decorations. I can't wait. I am going to out up my winter garlands, snow mans things that will fit in with Fall & winter.

i called my friend Joan and we decided how fun!!
the audience was packed with women (4 men)
we all laughed and cheered the whole time.
the entire action of the musical takes place in Bloomingdale's, NYC
it's a hilarious celebration of women and THE CHANGE.
i would recommend every women go and see it!!

what 30 day challenge

i have fallen off the challenge game plan. this weekend i went crazy. we had the annual halloween/b-day bash and i didn't go over board with eating i did with drinking!!! we had a great time and i haven't had so many drinks in such a long time. the spiral continued until today. I am back on track and that is what part of this challenge is about letting yourself enjoy things but also focusing so you don't continue to stay off track.

my exercise has been great i worked out 4 times last week and plan to continue this week. i am going to try my DVD's again instead of just Elli. i always enjoyed them and i want change so i don't get tried of the same routine. i do get so bored just doing Elli. time goes by fast because i watch sex in the city re-runs but still i get bored.

another note we got DSL!! i was online last night from home not pulling my hair out. dail up is no longer a part of our life!!

it's been a month????

Wow, I can't believe it has almost been a whole month!!
as i look back and jump for joy that i was able to last the whole month with out running to the store i am so impressed!!
I DID it. i was able to go a whole month and only have to go for milk
i can't tell you how much time and energy i have saved over the last month
I will be making my next monthly trip this Friday
i don't go on the 1st or 3rd of the month because every rude crude person is out
this month i will need to plan the Thanksgiving meal
as of right now i will have 10 people (just found out Saturday i may have 10 more coming {more on that later})
i already have most of my meals planned out
i worked on taking inventory this weekend
i have been writing things down as i use them so it is easier at the end of the month.
things i will need to purchase more of for November:
bread, yogurt, cheese, fruits
i didn't run out but it always good to have extra just in case

Day 4 (long day at work)

Still on track. I been packing my lunches and drink plenty of water. Tonight is my late night at work. Sometime it flies by others it drags. I have 2 appts tonight one has already been a no show. the other isn't until 7 pm. Let's hope one shows.
Last night I exercised on Ellie (elliptical) while watching old Sex in the City reruns. It makes the time go by so fast. I also did stomach and legs. Tonight is my off night. Wednesday I am going to try my hardest to get up extra early and get in a DVD workout and maybe try to do Ellie at night.

Month of Meals

*sorry it's small. I will work on making it larger*
This is one great tool I use to be able to buy my groceries once a month. As you can see it's in pencil. I don't follow it to a tee I adjust things depending on how I am feeling, But I do always know that I have things in stock. I usually pull things from the freezer two nights before so they are defrosted. Since it's so small I will list the meals below:

grill cheese, BLT's, pasta and meat sauce, pizza, chicken nuggets/tots, rib eyes/fries, calizones, chicken bake, lasagna, hamburgers/fires, taco's, mac-n-cheese, sausage/porgies, pork chops/rice, prime rib/potatoes
We eat out on Thursday's and if we decide not to I will bring something home. On Tuesday's we eat left overs I work until 7.

the show started at 3pm we arrived and enjoy the atmosphere
we purchased the $3 water and $3 soda (noticed you can't take them in)
oh well, we entered the theatre and me a people watcher notice all types of people came
the dressed up, jeans & sweat shirt, young & older
it was great!!!
the show started and I wasn't sure what to expect......
We were both so impressed
the play was funny & the sense of humor was right up my ally
the sets are amazing they looked as if they were 3-d.
this was something that we would have never done but I am glad we did
oh and we went to dinner after and we were home by 7!!

I only have had to go to the store for milk!!! I feel like I have saved so much time and money. I don't have to stop after work and buy things that I wasn't planning on. I am prepared the night before on getting things out for the next day's meal.
I can't believe November is right around the corner. I have started a rough draft of menu's and a shopping list. I host Thanksgiving so this month I have a little more planning. I find that Thanksgiving or any Holiday the cooking relaxes me. I make my lists of what I need, what I will make, times to start and when they will get done (I am a list person I live by my list when I am planning a party or a event).

Next weekend I am having our annual Halloween/birthday bash. My husband's birthday is 10/31 it's a great time to get together with friend and a great reason to have a party.

Honey & Coconut Oatmeal cookies

Honey & Coconut Oatmeal Cookies (22 cookies, 1 pt per cookie)

Ingredients
3 Tbsp margarine-like spread, approximately 40% fat, room temperature
1/4 cup SPLENDA® Brown Sugar Blend
1/4 cup honey
1 egg
1 Tbsp water
1/2 cup whole wheat flour
1 and 1/2 cups Rolled Oats
1/2 tsp table salt
1 1/2 tsp pumpkin pie spice
1/4 tsp baking soda
1/2 cup sweetened coconut flakes
Instructions
1. Preheat oven to 350 degrees. Spray a cookie sheet with non-stick cooking spray.2. Using a mixer with the paddle attachment, mix together the butter, brown sugar blend, honey, egg and water thoroughly.3. Mix together dry ingredients and then add to the wet. Mix together. Stir in coconut.4. Drop by spoonful onto prepared cookie sheet. Bake for 15-17 minutes until brown. Cool on wire rack.

Chicken bake

Boneless, skinless chicken breast (enough to fill a 9"x13" baking dish {i used 3 big breast})
2 cans cream of mushroom soup (i used 1 can COM & 1 can cream of chicken)
Swiss cheese slices ( I used shredded cheese {4 cheese Italian})
1 box of Stove Top Stuffing (chicken flavor)
1 stick of butter

Place chicken in 9x13 baking dish. add mushroom soup (undiluted). next sprinkle cheese over chicken and soup. take one box of Stove Top stuffing mix the bread crumb and seasoning packet together in bowl (i used the canister so this stop was already done).pour over chicken. melt butter and pour over top. bake at 350 for 1 hour. if it starts to get to brown, cover with foil ( i covered mine 45 minutes into baking)

This is a suburb recipe. it's quick & easy. we have plenty of left overs and it tasted great reheated!!!!

HG- Pumpkin pie=2 pts



HG's Too-Good-To-Deny Pumpkin Pie...
Ingredients:
For Crust-
2 cups Fiber One bran cereal (original)
1/4 cup light whipped butter or light buttery spread (like Brummel & Brown); melted & mixed with 1 oz. water
3 tbsp. Splenda No Calorie Sweetener,
granulated 1 tsp. cinnamon
For Filling
One 15-oz. can pure pumpkin (NOT pumpkin pie filling)
One 12-oz. can evaporated fat-free milk
3/4 cup Splenda No Calorie Sweetener, granulated
1/2 cup fat-free liquid egg substitute (like Egg Beaters)
1/4 cup sugar-free maple syrup 1 tbsp. pumpkin pie spice
1/2 tsp. cinnamon
1/8 tsp. salt Optional
Topping:
Fat Free Reddi-wip
Directions:
Preheat oven to 350 degrees. In a blender or food processor, grind Fiber One to a breadcrumb-like consistency. Combine crumbs with all other crust ingredients. Stir until mixed well. In an oven-safe 9-inch pie dish sprayed lightly with nonstick spray, evenly distribute mixture, using your hands or a flat utensil to firmly press and form the crust. Press it into the edges and up along the sides of the dish. Set aside. In a large bowl, combine all ingredients for the filling. Mix well. Pour mixture into pie crust. (Filling may be taller than the crust -- trust us, this is okay!) Bake pie in the oven for 45 minutes, and then remove it and allow to cool. Chill in the fridge for several hours (for best results, chill overnight). Cut into 8 slices, and if you like, top with Reddi-wip before serving!

First month of monthly shopping. I spent $280for the month. Note that most of my purchases will last more then a month. I stocked up on everything this month. Next month I will have other things to replace but I don't think it will be as big.
This week I plan on making my lasagna which I make 3 at a time (3 months) I will also make mac-n-cheese (3 months) the hamburgers I bought will last 5 months. I will keep you updated on how I do for the month if I need to make and grocery runs!!!

How long can you freeze food?

Basic tips for freezing food:
Freeze foods as close to purchase (or harvest if you have a garden) as possible. The fresher food is when you freeze it, the better the quality when you defrost it.
While most foods can be frozen, there are some foods you should keep out of the freezer. Don't freeze canned foods or eggs in shells (which can crack and allow bacteria to enter). Technically you can freeze mayonnaise, cream sauce, and lettuce, but the quality takes a big hit. Cool cooked foods down before freezing so they freeze faster, which helps preserve quality.

monthly shopping????

I have decided to only grocery shop 1 time a month (exception of milk). I am trying to make things easier for myself so only having to go to the store 1 time in a month will be hard in planning but will pay off.
Once my master list is set it won't be hard to work for the next month. I have planned 25 meals knowing that we will eat out or we will have left overs.
Friday is my day to do my first shopping. I know it will take a long time at the store I know my bill will be huge but I also know I won't have to go to the store for a month!!!
I am excited. I have always loved grocery shopping but I find it hard to do after I get out of work or traveling back into town on the weekend just to shop. I enjoy looking around exploring new items.
My plan is to go to Sam's and buy my soda, juice, paper products and some meat (which will last more the just this month) and then head over to Super Wal mart for the rest. I have my list made I just need to check a couple of things.
I get out at 2 pm on Friday's so it shouldn't be too busy but it doesn't matter because I know that I have all the time to shop. I will keep you posted on how it goes!!!

Dreams

Dreams
I don't have dreams very often (that I remember) but when I do they are eye openers.
Last year the week before my wedding I had a dream that my teeth fell out. I looked it up in a dream book the meaning of teeth falling out is LIFE EVENT (no thoughts about I was having a life event).
Last night I dreamt the same thing. I was at my parents home that I grew up in. I had just gotten of the school bus went in to my house and used the front door (we never used the front door) started talking to my mom and my teeth started falling out not all of them but the became loose and then one at a time the fell into my hand. I didn't freak out I just thought man why is this happening.
I looked it up online this morning and it again told me a life event or death of a family member. As I look back a year ago my grandfather passed away in November. I believe I had this dream because it is almost the 1st year anniversary of his death. How crazy is that I have the same type of dream around the same time.
I don't know what I believe as far as dream but what a weird occurrence

Top 2 Tuesday- favorite things about FALL


1. PUMPKIN!!!

I love pumpkin!!

I like pie, cookies, ice cream, fudge anything pumpkin!!!

Here is a great recipe for pumpkin whoppie pies from Rachel Ray

Ingredients:
1 1/2 sticks (6 ounces) unsalted butter, 1 stick melted, 1/2 stick softened
1 cup packed light brown sugar
2 large eggs, at room temperature, lightly beaten
1 cup canned pure pumpkin puree
1 tablespoon pumpkin pie spice
1 1/2 teaspoons pure vanilla extract
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon plus 2 pinches salt
1-2/3 cups flour
4 ounces cream cheese, chilled
1 cup confectioners' sugar
Directions:
Preheat the oven to 350°. Line two baking sheets with parchment paper.
In a large bowl, whisk together the melted butter and brown sugar until smooth. Whisk in the eggs, pumpkin puree, pumpkin pie spice, 1 teaspoon vanilla, the baking powder, the baking soda and 3/4 teaspoon salt. Using a rubber spatula, fold in the flour.
Using an ice cream scoop or tablespoon, drop 12 generous mounds of batter, spaced evenly, onto each baking sheet. Bake until springy to the touch, about 10 minutes. Transfer to a rack to cool completely.
Meanwhile, using an electric mixer, cream the softened butter with the cream cheese. Add the confectioners' sugar and the remaining 2 pinches salt and 1/2 teaspoon vanilla; mix on low speed until blended, then beat on medium-high speed until fluffy, about 2 minutes.
Spread the flat side of 12 cakes with the cream cheese frosting. Top each with another cake.

Chilly Chocolate Nutty Banana Pops- Hungry Girl

I love chocolate covered banana's!!! I NEVER have them due to not being able to find them. This summer I found one to late already ordered my ice cream. Hungry Girl once again has come up with a quick & easy way to enjoy a summer favorite!

Chilly Chocolate Nutty Banana Pops
PER SERVING (1 pop): 115 calories, 3.5g fat, 40mg sodium, 21g carbs, 2.5g fiber, 13g sugars, 1.5g protein -- POINTS® value 2*

Make your own nut-covered, chocolate-drizzled banana pops... Weeeee!

Ingredients:2 tbsp. All Natural Almond Accents Honey Roasted Flavored Sliced Almonds
1 medium banana
2 tbsp. Hershey's Lite chocolate syrup

Directions: Roughly chop the sliced almonds and set aside. Peel banana and cut in half width wise. Place both halves on a plate lined with wax paper. If you like, slide a craft stick into the cut side of each half (like a Popsicle).
Evenly drizzle banana halves with chocolate syrup and sprinkle with chopped almonds.
Gently roll banana halves in any excess syrup/nuts on the plate. Freeze for at least 1 hour. Enjoy!

MAKES 2 SERVINGS

Shortcut Pumpkin Bread

I found this recipe in a Parents Magazine.

Short cut Pumpkin Bread
-prepare a yellow cake mix, according to package, omit water
-stir in 1 cup pumpkin puree, 1 cup mashed bananas, 1 tsp cinnamon
-pour into greased 9 in loaf pan
-bake at 375 for 50 minutes

Frosting
-In mixer beat 4 oz cream cheese, 1/4 cup softened butter until creamy (2minutes)
-stir in 1/2 tsp vanilla and slowly add 1 cup confectioner's sugar

Frost cooled bread, chill

makes 16 slices

Career change?????

P.I Wendy- I am so proud of myself! Justice will be served. Yesterday on my way to work I was hit!!! I was at a STOP sign and a vehicle didn't stop and swiped the side of my car. I pulled forward and pulled over to exchange insurance information and he left!!! I couldn't only get 3 letters of his plate. I tried to get back into traffic but I couldn't. I called the police and they made a report and told me they would run the vehicle and plate information I had but it would be hard to find the guy. I was annoyed that people today feel they can get away with whatever they want. SO...... I headed down to the scene of the accident this morning and waited. This guy is NOT going to get away with this. As I sat on the side of the road I was thinking what will I do.I wouldn't get out or try to stop him but I was ready with my paper and pen. I saw him I put my car in drive and copied down his plate #!!!! I called the police and they are going after him. Justice will be served. The police thanked me and will be in contact to get me his insurance information.
Just call me P.I Wendy!!!!

I would never confront this person or do a high speed chase. It was about being safe and hoping that I would find him so the police could take care of it. They are trained and they do a great job!

My Aunt Lois is an amazing cook. She makes everything home made.
She made a great recipe the other day and I loved the spices in it.
She makes her own and she passed along the recipes!
I have only tried the Chili and it's so much better then the packets you get in the store.

Lemon-Pepper Seasoning Mix
1/2c. black pepper
3T. dried lemon zest
1 1/2T coriander seeds
2 T. dried minced onion
2T. thyme leaves
Combine all ingredients. Blend well. Store in air tight container.

Chili Seasoning Mix
Ingredients:
* 1/2 cup dried parsley flakes
* 1/2 cup chili powder
* 1/4 cup dried minced onion
* 2 tablespoons salt
* 1 tablespoon Caynne pepper (optional)
* 2 tablespoons dried minced garlic
* 2 tablespoons ground cumin
* 1 tablespoon ground coriander
* 1 tablespoon each dried cilantro flakes, basil and oregano
* 1 tablespoon crushed red pepper flakes
* 1-1/2 teaspoons pepper

Directions

* In a small bowl, combine all ingredients. Store in an airtight container for up to 6 months. Use as a rub for pork or sprinkle on fish or as a seasoning for chili. Yield: 1-3/4 cups.


Nutrition Facts: 1 tablespoon equals 18 calories, 1 g fat (trace saturated fat), 0 cholesterol, 531 mg sodium, 3 g carbohydrate, 1 g fiber, 1 g protein.

Great idea- wedding

I was at a wedding last weekend and saw a great idea (I wished I did this). The bride decided that the traditional guest book was not the way she wanted to go. She bought a book (in her case a book about horses that you would use for a coffee table book) and asked all the guest to sign a page that they liked!!! It was great. How often do you look at your guest book. Now you can leave it out everyday!!!!

Oreo Pie

Oreo pie-

Ingredients:
1 pkg Oreo's (I used off brand, reduced fat)
1/4 cup melted butter
8 oz cream cheese (I used off brand, 1/3 less fat)
1 pkg instant chocolate pudding
1 tub of cool whip (I used off brand, low-fat)
1/4 cup powder sugar

Directions:

Crush Oreo's ( I used my small food processor). Set aside 1/2 cup for the topping of the pie. Melt butter and add to the remaining Oreo's. Mix and pour into 9 inch pie plate. Pat down Oreo's to form a crust. Beat cream cheese for 2 minutes on high speed. Add powder sugar & 1/4 of the tub of cool whip. Start mixer on a low speed, then beat on med-high for 1-2 minutes. Pour the mixture onto the crust. Make pudding according to directions (I always use 1/4 cup less of milk. It helps make the pudding stiffer). once the pudding has set up pour over cream mix. Take the remaining cool-whip and spread on top and sprinkle with the 1/2 cup of oreo's.
I didn't have a recipe to work with so I made my own. I bought it into work for a going away party for the intern. It was a big success!!

Eye- love Dior

Love it!
When I was in Vegas last September I stopped into my favorite store
Sephora.
I only shop online because I don't have one any where near me
So, very excited. I spent hours just browsing and I finally asked a nice sales person to help me get a great mascara.
She asked what are you looking for?
long, full, thick lashes (isn't everyone)
but...
I ALWAYS get the black circle under my bottom lash's so I need something that will stay on my lashes (I don't ever ever put mascara on my bottom lashes because it's doesn't work for me)
